Savory Ladies’ Kisses (Baci di Dama) with apple and cinnamon relish

(recipe developed in collaboration with Terry Sarcina, ALTOPALATO)

Baci di Dama salati con confettura di mele e cannella

Ingredients for 300 grams of Ladies’ Kisses

100 grams of butter
100 grams of flour
100 grams grated parmesan cheese
a pinch of salt
2 tablespoons of apple and cinnamon relish

Mix quickly all the ingredients: butter, flour, parmesan and salt, without heating the dough, wrap it in a sheet of cling film and let rest in the refrigerator for a few hours.

Roll out the dough to a thickness of about 1cm and, with a round pastry cutter with a diameter of about 2cm, crop little discs and roll forming many balls.

Place them on a baking sheet lightly buttered and floured and cook in preheated oven at 150 to 160 degrees for about 15-20 minutes.

Let them cool and couple them with a bit of apple and cinnamon relish, possibly mixed with a few drops of balsamic vinegar.
